Spinach and Walnut Pesto AminoPasta with Crispy Tofu

This recipe is designed to provide a combination of essential amino acids through the use of protein-rich and nutrient-dense plant-based ingredients.

Ingredients (for 2 people)

  • 150g of AminoPasta
  • 100g of fresh spinach
  • 20g walnuts (rich in omega-3 fatty acids)
  • 100g tofu (rich in protein, to complete the amino acid profile)
  • 1 clove of garlic
  • 1 tablespoon extra virgin olive oil
  • 1 tablespoon lemon juice
  • Salt and pepper to taste
  • 10g nutritional yeast flakes (optional, for a cheese-like flavor)
  • A pinch of chili pepper (optional)

Instructions

  1. Cook the pasta : Bring a pot of salted water to a boil, then cook the AminoPasta according to the package instructions.

  2. Make the pesto : In a blender or food processor, combine the spinach, walnuts, garlic, olive oil, and lemon juice. Blend until smooth. Add a pinch of salt and pepper to taste. If desired, add nutritional yeast for a bolder flavor.

  3. Crispy Tofu : Cut the tofu into cubes and pan-fry it with a drizzle of oil until golden and crispy. Add a pinch of salt and pepper (and a pinch of chili pepper, if you like a spicy kick).

  4. Combine the ingredients : Drain the pasta and toss it with the spinach pesto. Add the crispy tofu cubes and mix gently.

  5. Serve : Transfer to plates and garnish with a few chopped walnuts and a drizzle of raw oil.
